To make muffins and cookies uniform in size, use an ice cream scoop. A gelato scoop is smaller in size and great for cookies. The larger ice cream scoops are great for muffins.

If you have over salted or over spiced your chili, add a handful of semi-sweet chocolate chips to your chili pot and stir throughly until melted & blended. Why don’t you just add a handful of semi-sweet chocolate chips to your chili pot anyways, it really helps improve the flavor and color of your chili.

Salsa Chicken – Quick and Delicious!

Happy New Year Everyone!

I tried this recipe a couple days ago and I was very impressed with the results. It is one of those recipes where it looks as if you fussed, but the dish is quick and simple. Although, I’m providing the link to the recipe, you really don’t have to measure the ingredients to make it. Really, it is that simple. I used extra salsa and a Tex Mex cheese on top instead of Cheddar, but you can adjust this recipe to be more or less saucy and as mild or as spicy as you wish it to be. Since I choose to use more salsa than a cup, I served this over rice with a side of kernel corn.

Quick and Light Christmas Desserts

I find a lot of times after Christmas dinner a lot of guests are too full to eat a richer, more filling dessert. Here are a couple of my lighter favorites. (no links as I tweaked ingredients)

Brandied Peaches

1 - 14 oz. can of sliced peaches with juice

2/3 cup brown sugar

2 tablespoons butter or margarine

1/4 teaspoon cinnamon

1 teaspoon lemon juice

1/4 cup brandy

1/4 teaspoon almond extract

vanilla ice cream

Put peaches into a saucepan with juice. Add the sugar, butter, cinnamon, lemon juice, brandy and almond extract. Heat over medium heat until boiling. Reduce heat and simmer for 5 minutes. Keep hot until ready to serve.

Serve warm brandied peaches over a couple generous scoops of vanilla ice cream.

Makes about 6 servings, if you have a crowd double the recipe.

(this dessert can be made in advance, leftovers can also be put in the fridge and reheated over and over again. But…it rarely lasts that long.)

Lemon Sauce Pudding

2 egg whites

1 tablespoon butter or margarine

1 cup white sugar

1/4 cup flour

2 egg yolks

1 lemon (juice and grated rind)

1/8 teaspoon salt

1 1/2 cups milk

vanilla ice cream

Beat egg whites until stiff. Put aside.

Measure butter, sugar, flour, lemon juice, lemon rind, salt and milk into mixing bowl. Beat until slightly blended. Fold in beaten egg whites.

Turn into 8 inch casserole dish. Set casserole dish in a pan of hot water and bake at 350 F. for about 45 minutes until browned.

Serve with a scoop of vanilla ice cream on top.

Makes about 6 servings

A chicken recipe with a twist

I recently tried this Chicken recipe that calls for a touch of bourbon and was pleasantly surprised with the tasty results. I followed the recipe as written, but I didn’t have bourbon whiskey on hand so I substituted a good quality scotch whiskey instead. I served the chicken over steamed rice with a side of vegetables. I would not hesitate to make this recipe again or serve it to company. Here is the link:
